Brigsten’s restaurant is led by chef/co-owner Frank Brigtsen, who produces spicy, home-style Acadian/Creole dishes in a cozy, century-old cottage in Riverbend. Despite a resume chockfull of cooking awards, there’s no single signature dish, only an overwhelming parade of New Orleans classics like turtle soup, rabbit and andouille gumbo, and roast duck with cornbread dressing and honey-pecan gravy—all made with only fresh, local ingredients. Regulars thumb their noses at the South Beach Diet with Brigtsen’s "Shell Beach Diet," a platter of seasonal, non-fried seafood drenched in local flavor.
