Being that William Jarvis studied physics and electronics at UC Berkeley, it seems appropriate that his winery is not only one of the most technologically advanced in Napa but also environmentally efficient by way of solar power. The entire facility, from fermentation tanks to bottling machinery, is housed in a 45,000-square-foot cave in the Vacas Mountains. The structure utilizes a stream and waterfall system to maintain consistent humidity within several interlocking, parabola-shaped rooms. Guests without appointments are welcome to explore the cave and taste the winery’s high-quality Cabernet Sauvignon, though a reservation is recommended for a full tour.
