Inspired by his childhood spent in a small Japanese fishing village, renowned chef Naomichi Yasuda trained for more than two decades in Tokyo and New York before opening this namesake sushi restaurant in midtown. Although Yasuda returned to Japan in 2010, his replacement Mitsuru Tamura continues Yasuda’s traditions behind the sushi bar—beginning with entirely homemade ingredients, from the soy sauce to the freshly grated wasabi. The restaurant’s airy interior is made almost entirely of solid bamboo planks, including the rough-hewn bar where chef Tamura and his team craft pure, simple sushi rolls with nearly 30 kinds of fresh fish.
