Morris Lapidus's crescent-shaped landmark has a longstanding reputation for grandeur, and has been one of Miami Beach's defining pieces of architecture for more than 60 years. But there's nothing old or stodgy about today's Fontainebleau, especially following its recent $2 billion renovation, which included the construction of a new entry and a 36-story oceanfront tower. Everything here is done on a grand scale, from the room count (1,504) to the dining options (there are nine in all, including options from chefs Michael Mina and Scott Conant) to the elaborate pool, which has three whirlpools, a two-story waterfall, and a children's play area with a lazy river and giant water slide. The hotel also houses two nightclubs, including the ultra-exclusive LIV (where Jay-Z one allegedly racked up a $250,000 champagne bill).
