Owner Sebastian Costello has created a uniquely Australian venue that serves only local spirit and jaffles (for the uninitiated, these are grilled sandwiches cooked in a press that seals them around the edges). The cocktail list was designed to highlight the individual qualities of each of the boutique spirits; for example, there's an entire page dedicated to Australian gins. Jaffles range from the traditional cheese (with either tomato chutney or Vegemite) to the "lamington," a sandwich of chocolate sponge cake filled with jam, sprinkled with coconut, and served with a side of cream.
