Located inside the Hesperia Madrid hotel, this Michelin two-starred restaurant was opened in 2001 by acclaimed Spanish chef Santi Santamaría. Furnished by designer Pascua Ortega, the basement-level dining room is decorated with glass walls, potted trees, and white-clothed tables that are widely spaced for increased privacy. Now led by Santamaría's protégé, chef Óscar Velasco, the culinary team prepares inventive Catalan dishes such as suckling veal tartare with carrot and mustard purée, and oven-roasted partridge with pumpkin and black olives. Santceloni is also known for its 600-label wine list and pre-dessert cheese trolley, which includes more than 70 varieties.
Before dinner, visit the Museo Nacional de Ciencias Naturales (National Museum of Natural Sciences), which is located across the street and contains more than six million specimens, including dinosaur bones.
