Chef Blaine Wetzel earned his forager’s badge under Rene Redzepi at Noma in Copenhagen; now he brings the same edible ethic to the 15-room Willows Inn on Lummi Island, two hours north of Seattle. The inn has its own farm, pastures for a flock of over 100 lambs, and a staff eager to point guests in the direction of wild Pacific Northwest treats on the beaches and back roads.
