On the vanguard of the fermentation revolution, Noma alum Kwang Uh serves highly original takes on kimchi fried rice and a gruel-and-beets dish called noorook. The space is tucked into a strip mall, has a little more than a dozen seats and is easy to miss—you won’t find a sign outside the door. Uh is constantly changing the menu based on seasonality and local availability, and Visitors should embrace his creativity.
