Everything about the aesthetic of Skye Gyngell's latest food venture Spring is enviable. The décor is crisp, clean, and white, yet it still manages to be warm and not austere. The acclaimed Australian chef garnered a Michelin star at her last post, as head chef at Petersham Nurseries. Here, Chef Gyngell is turning out sophisticated, thoughtful dishes, like scallops with green tomatoes, preserved lemons and chili, or filet of beef with Jersalem artichokes and cafe de Paris. Located within Somerset House, a Neoclassical gallery and events space in central London, dining here is an intimate, memorable experience.
