The Cambio del Tercio group is a budding empire, with its ham and sherry bar, gin and tonic bar, tapas and paella outpost, smaller tapas bar, and more formal restaurant—all of which are in West London, mostly cornering a section of the Old Brompton Road in South Kensington. It's where Rafael Nadal eats while in London for Wimbledon. From ham croquettes in a thyme tomato sauce to sensational Wagyu beef chorizo, the menu pleases with its sophisticated take on Spanish comfort food.
