This unassuming restaurant in Brixton Market serves what is, arguably, some of the best pizza in all of London. The secrets at Franco Manca is the crust, made from slow-rising sourdough, and the baking method, a wood-burning brick oven. Of course, it doesn’t hurt that their pizzas are crafted by artisans from Naples, either. The ingredients are fresh and the menu is strikingly, refreshingly simple – six pizzas in total, salad, soft drinks, organic wines, and a few brews. Diners can sample a traditional pie, such as tomato, mozzarella and basil, or opt for something more adventurous that's topped with capers, olives, anchovies and mozzarella.
At Franco Manca, the edge of the pizza crust is called cornicione and shouldn’t be skipped. The unique baking process lends it a delicious flavor and light texture.
