The falafel are airy and greaseless. The same light touch distinguishes the delicate pastries filled with spinach, pomegranate, and nuts; cinnamon-tinged makanek lamb sausage; and moujaddara, a subtly spiced lentil-and–crushed-wheat pilaf accented with caramelized onions.
