Stepping into IK is akin to walking into a massive vegetable cooler—the molecular tasting menu couldn't be fresher. The focus here is on organic and sustainable produce, from fruit to fish, in accordance with founder Ivan Kisic’s mission. Sadly, the young chef was killed in a car crash, but his twin brother, Franco, has taken on the mantle, with the kitchen helmed by cousin Mónica. Order à la carte or choose from the 11- or 14-step tasting menus; highlights include alpaca steak tartare and "octopus symphony."
