If you’re a Nobel Prize recipient, former president, or celebrity of any kind, you’ll almost certainly take your Las Vegas lunch at the Country Club. Set at the end of a long hallway, the dining room places you right at the 19th hole of the Golf Club at Wynn, a Tom Fazio-designed course that’s also a designated wildlife habitat. The clubby atmosphere, fastidious service, and sense of quiet anonymity here give it the feel of a traditional New England country club—as does the menu of Chef Carlos Guia, which offers elevated classics like steaks, seafood, and the best hot dog in town. (Guia’s New Orleans heritage, though, comes through in dishes like shrimp and grits—and like every restaurant within Wynn and Encore, there’s a separate vegan menu.)
