The terrace of this oceanside global restaurant at the exclusive Ritz-Carlton Kapalua overlooks Pailolo Channel and Molokai Island. Decor is minimal, incorporating non-intrusive stained wood and simply appointed tables that don't distract patrons from soaking in the Pacific views. Chef JoJo Vazquez, in his second stint as Banyan Tree's chef de cuisine, utilizes traditional Hawaiian names to identify each course. For example, na pupu o keia wa translates as “contemporary appetizers," among them Asian-inspired dishes such as ahi sashimi or tempura shrimp. Meanwhile, the main courses, or na mea ‘ai nui, like grilled ahi tuna with snow peas or Hawaiian snapper served with miso and cucumbers, emphasize local products.

Before dinner, stop by the Ritz's Alaloa Lounge, located off the lobby, to soak in the Maui sunset and enjoy drinks at the onyx-topped bar, which is backed by a wall of black lava stone.
