Brewery-turned-bar the Populist—one of the more notable recent additions to Istanbul's booming craft-beer scene—occupies the former home of Bonomti, one of Turkey's two big beer manufacturers (Efes is the other). A two-story wall of windows fronts the soaring brick structure; inside, six fermentation tanks perch on a mezzanine overlooking a brass-topped bar, well-spaced tables, and a bright-red VW camper van bearing the brewery's motto: Serve the People. The 12 beers on tap, which change by the week, might include a hoppy IPA, sweet-spicy honey pepper ale, and a Cabernet-colored wheat beer with hints of berry. Fine weather is an excuse to linger over beer flights at an outdoor table. A DJ spins tunes on Friday and Saturday.
