Each chef has his own garden on site, meats are cured in house, and there's also an extensive pickling program. Dishes are prepared in the exposed, open-fire kitchen, and the atmosphere is rustic yet upscale—the design was carefully executed, and there's a story behind every wide wood plank and refinished table. Gumbo, foie gras, and sweetbreads are all excellent, but perhaps the best part of the experience is the surprising new menu options offered with every visit.
