A poolside restaurant at the Coco Palm hotel in Rodney Bay bears the Creole name of the small sweet banana commonly grown on St. Lucia. Airy beach breezes, dark mahogany tables and chairs (seating for 90), and murals painted by local artists fill the space, where hotel guests and visitors alike come for breakfast, lunch, and dinner. Executive chef Richardson Skinner and head chef Giancarlo Crumps, both natives of Trinidad and Tobago, run an open kitchen serving French Caribbean cuisine. The bar serves various rum cocktails, cold Piton beer, and snacks, while live entertainment performs.
