Gastronome or not, France is the place to go for great food. The country has a long history of not only rich, haute cuisine, but a tradition of excellent regional fare that has transformed France into the culinary giant it is today. It’s far too difficult to name just a few of the many great restaurants in France (though the famed Guide Michelin is always happy to help), so those visiting France restaurants should work overtime to try cuisine that is unique and native to the country like pot-au-feu, a hearty beef stew; matelote, fish cooked in cider; coq au vin or boeuf bourguignon, chicken or beef braised in red wine; and ratatouille, a rich vegetable stew. And don’t forget to drop by an authentic patisserie to stock up on madeleines, croissants, macarons, baguettes and all the delicious breads, desserts and cheeses that have set France restaurants apart as leaders in culinary excellence.

As a type, the wispy Paris student with holes in his soles is alive and hungry, and you will find him here, tucking into mountain-man portions of chicken, tripe, snails, tuna, and baby squid—all à la basquaise (with onions, tomatoes, and green and red peppers).

From chef Guy Martin of Paris’s Grand Véfour restaurant comes a new concept of gourmet fast food in a modern setting.

Situated near the Place de la Bourse in the Second Arrondissement, this traditional French restaurant is located in the two-story building that was once home to Le Petit Coin de la Bourse.

Considered the epicenter of the bistronomy movement, La Régalade opened in 1992 under the direction of Yves Camdeborde, champion of the French back-to-basics culinary revolution. Chef Bruno Doucet now carries on the tradition.

This authentic French bistro dating to 1912 has played host to every Parisian mayor of the past century. Just steps from the city's Hotel de Ville (town hall), Benoit was run by a single family for three generations before being obtained by Alain Ducasse's restaurant group in 2005.

The restaurant offers a superb lunch. The hotel only has seven rooms, all of them lovely and freshly renovated, and each with a view of the river.
