From restaurateur Jack Lamb comes this tiny, 16-seat restaurant in the East Village. At Degustation, chef Wesley Genovart, who previously worked at Perry St, is the center of attention since all seats at the U-shaped counter face the open kitchen. Diners look on as the chef and his team carefully plate the Franco-inspired Spanish tapas, which include such delicacies as oxtail and potato cannelloni, pork belly with mustard greens, and a Spanish tortilla with quail egg and shallot comfit. Most opt for either the five- or ten-course chef's tasting menu, which often concludes with the popular caramelized torija.
Insider Tip:
Since the restaurant is so intimate, it’s necessary to make reservations beforehand, and the space is really not ideal for more than two or three people per group.
