Featured on television and in books, Chef Kevin Thornton had made his mission clear to incorporate Irish ingredients into modern cuisine. Having moved to its current location within the Fitzwilliam Hotel in 2002, Chef Thornton’s eponymous restaurant was designed by the 1100 Architecture firm from New York. The white-walled space showcases large photographs taken by Thornton himself, and the large windows lend views of St. Stephen’s Green. A round window allows guests to see the kitchen staff at work preparing signatures like Wicklow deer with parsnips, tarragon gnocchi, and chocolate sauce. Thornton also teaches a master cooking class Thursday through Saturday.
