Americans have gone crazy for this ingenious French-Vietnamese sandwich, but you haven’t really tasted banh mi until you’ve tracked down the venerated Gai Banh Mi cart in Ho Chi Minh City’s First District. Coins of brazier-sizzled minced pork go into a crisp split baguette, with chili sauce, cilantro sprigs, and cucumbers. The whole is swaddled in newspaper and tied with a rubber band to take home—or ecstatically devour on the sidewalk.
