After studying the art of coffee and espresso in Italy in 1994, Keith Herbert purchased a small coffee cart and started his business Ink! in Aspen, Colorado. Today, Herbert’s creation has expanded to seven different shops within the state. Located in the Riverfront Tower in Commons Park, the first Denver Ink! serves customers who happily wait in line for hand-roasted coffee and gourmet eats like the ancho turkey sandwich with red bell pepper, ancho chili jam, cream cheese, red onion and lettuce.
Insider Tip:
While there is street parking and some metered spaces nearby, if it’s really crowded, you may want to park on Platte St. and just walk through the park.
