Copenhagen
Søren K
Named for Denmark's most famous philospher, Soren K is located on the first floor of the ultramodern Black Diamond addition to the city's Royal Library. Glass walls on one side afford unobstructed views of the nearby city entrance canal. The rest of the space is outfitted with untreated concrete walls, blonde wood furniture in simple shapes: wooden bench seats with padded cylindrical backrests and a slab of wood extending from the wall to serve as a table. On the menu, diners find entrees such as smoked salmon and veal chops with lobster sauce, all cooked butter-free accoding to the chef's philosophy.
Insider Tip:
Take one of the Library's guided tours (available in English) to learn more about the buidling's history, collections, and architecture.
