The chefs at Clou follow no dogma; the only thing the food is subject to is the almost impossibly high culinary ambitions of the chefs in the kitchen. The head chef has been trained in France, so plan on a strong focus on craftsmanship in the seven-course tasting menu (which can also be ordered a la carte)—you'll see it in starters like oyster and passionfruit, caviar and goat milk, rosemary and parmesan, and duck liver and quince. The place also serves as a wine bar, and the massive champagne cooler is a crucial part of the decoration.
