Etch
InterContinental Sydney
Sydney, New South Wales, 2000, Australia
Housed inside the InterContinental Hotel, this modern European restaurant is owned by Justin and Georgia North (also of Bécasse). Lined with white pillars and large arched windows, the dining room is decorated with intricate floral wallpaper, high-backed brown booths, and quirky touches like an oversize urn filled with ostrich feathers, and tiny metallic roosters set atop each table. Emphasizing local organic ingredients, the menu includes French-inspired dishes like rabbit and chicken terrine with pickled honeydew, Dijon emulsion, and pancetta crumbs. The bar serves handcrafted cocktails along with gourmet snacks, such as fried goat cheese with lavender-scented honey.
Insider Tip:
Before dinner at Etch, spend the afternoon in the nearby Royal Botanic Gardens, home to more than 45,000 types of plants, as well as duck ponds and sculptures.
