O Kambos is a small, family-run Greek tavern located on the main road out of Chios. Inside, the scent of the valley’s famous citrus orchards mingle with the smells of homemade local specialties, such as mastelo (fried grilled cheese), eggplant tempura, and a variety of fresh seafood. The chefs flavor their dishes with the island’s wild herbs, which include some of the best oregano in the country, and entrées are paired with wine or mastica, an alcoholic drink made with the resin of native mastic trees.
While in Kambos, make sure to visit the Citrus Estate, an 18th-century stone mansion converted into a museum about citrus cultivation. An on-site shop sells homemade marmalades and citrus marzipans.
