Located inside the Hilton Sydney hotel, Glass Brasserie is owned by celebrated chef and restaurateur Luke Mangan, previously of Michelin three-starred Waterside Inn in Berkshire, England. Designed by Tony Chi, the dining room is decorated in warm neutral tones, with hardwood floors, huge white columns, and a 42-foot glass wall framing impressive views of the 19th-century Queen Victoria Building (which is illuminated after dark). Incorporating fresh local produce, the menu includes such signature dishes as pan-fried gnocchi with asparagus, corn, Parmesan, and lemon thyme. In the adjacent bar, three floor-to-ceiling wine towers hold more than 400 bottles.

For a more affordable experience, opt for a weekday lunch at the Glass Wine Bar. Just be sure to arrive early—the bar is relatively small and doesn’t accept reservations.
