A memorable meal begins with a ferryboat ride to this hidden open-air restaurant at St. Lucia’s Marigot Bay. In this tropical setting, dockside tables are configured around an illuminated lagoon. Chef Jim Verity prepares gourmet Caribbean fusion dishes like chili-infused shrimp and scallops with parmesan risotto and a lime-ginger cream or salmon with a black bean, coconut, and clam broth over saffron garlic linguini. The food and atmosphere are worth the 20-30 minute drive from Castries. Don’t miss the mellow music of a jazz pianist, Emerson Nurse, playing in the lounge on Wednesday and Sunday evenings.
