Part of the Boulders resort, Latilla serves upscale Mediterranean cuisine that incorporates local ingredients, as well as French and Italian influences. Inspired by the surrounding desert, the earth-toned dining room is accented with bright red chairs and metal cutouts of Native American petroglyphs. Huge spruce trunks support the ceiling, which is comprised of latillas (little sticks), and large windows frame views of a waterfall cascading from 12-million-year-old boulders. Outside, terrace seating surrounds a mesquite-burning fireplace. Meals begin with walnut cranberry rolls with homemade chipotle-agave butter, followed by entrées like rosemary-marinated veal loin with slow-cooked tomato, creamy polenta, and rosemary sherry.
