In the heart of downtown Boulder, Centro Latin Kitchen serves up gourmet versions of Latin cuisine typical of the open-air markets of Central and South America. Executive Chef Ian Clark, who trained at the New England Culinary Institute, crafts an ever-changing menu of such favorites as shrimp tacos, goat cheese masa cakes, and grilled corn and mushroom ancho chile rellenos. There always seems to be a twist on traditional recipes that add layers of flavor, like BBQ spare ribs served with jalapeño or butternut squash soup spiced with yellow mole. Outdoor dining is available during warmer months, but the interior’s Southwest cantina vibe is welcoming year-round.
