To a college student, “hot pot” might mean its ramen night again. But in Asia, it takes on an entirely different meaning: Ding Ding Xiang restaurant in the  Dongcheng neighborhood is marked by a “Hotpot Paradise" sign and serves Mongolian-style fondue. Diners double as chefs, adding ingredients into a simmering pot that’s cooked in front of them. Lamb, beef, pork, and vegetables can all be added into the cauldron; and once everything is cooked, jinpai tiaoliao (a dipping sauce) adds even more flavor to the creation.
