When Will Dodson and Ruth Schimmelpfennig graduated from the Culinary Institute of America, they established two successful restaurants in San Francisco before moving into this 1796 red-brick château in the hills of Barnard, Vermont. Opening a restaurant on the ground floor, the couple began serving modernized regional cuisine in a Colonial-style dining room, furnished with white tablecloths, high-backed wooden chairs, and a working fireplace. Emphasizing farm-to-table cuisine, the seasonal tasting menus may include dishes like beef-battered oysters, and roasted duckling with raspberry glace and whipped potatoes. In back, the more casual Max’s Tavern serves a menu of upscale bar fare.
Insider Tip:
If you visit during spring or summer, arrive early for your reservation and stroll through the adjacent gardens, where many of the restaurant’s fresh ingredients grow amid flower-covered trellises.
