Operating out of a vintage Avion trailer, this cash-only crêpe vendor serves sweet and savory variations of the French staple, all of which are made from scratch with high-quality ingredients. Despite its quirks—which include ever-changing hours—Flip Happy still draws huge crowds to its gravel lot, where bright blue picnic tables are shaded by cloth canopies and tall pecan trees. Inside the trailer, co-owners Andrea Day-Boykin and Nessa Higgins prepare specialties like the roasted chicken crêpe with caramelized onions, goat cheese, and garlic aioli, and for dessert, the cinnamon-sugar crêpe with toasted coconut, crushed almonds, and cream cheese frosting.
