Matsuhisa Lounge
Matsuhisa Aspen is part of the international Nobu brand of restaurants, named for its well-known chef-proprietor, Matsuhisa Nobu. It is housed inside a former miners' cottage that has been renovated to reflect an Asian theme, with wood and bamboo accents, and Japanese artwork. The menu at Matsuhisa is a fusion of Japanese, Peruvian, and Argentinian cuisine. Specialty dishes include black cod marinated in sweet miso and Chilean sea bass with black truffles. The main dining room is on the ground floor, and a lounge and sushi bar operate upstairs. All sake served at Matsuhisa is brewed exclusively for the restaurant by the Hokusetsu Sake Brewery in Japan.
Insider Tip:
Reservations for the main dining room downstairs are only accepted one month in advance. Walk-ins are seated on a first-come, first-served basis in the upstairs lounge, which serves the full menu.
