Le Versance

Situated near the Place de la Bourse in the Second Arrondissement, this traditional French restaurant is located in the two-story building that was once home to Le Petit Coin de la Bourse. Reinvented by well-traveled chef Samuel Cavagnis, who previously trained under George Blanc, the restaurant is now a stylish fine-dining destination decorated with plush gray chairs, crisp white tablecloths, restored stained-glass windows, and rustic wooden ceiling beams. Starters like the grilled foie gras with artichoke emulsion, truffle oil, and avocado are followed by such entrées as the pot of monkfish cheeks and shellfish (clams and mussels) flavored with saffron.
