Twenty-four-year-old Australian Milan Sekmulic is a liquor world
wunderkind, who nabbed his first job in an Italian restaurant back home
in Canberra at the age of 15 and was managing the bar there a year
later. He went on to win his first cocktail-making contest at the age
of 21, and was headhunted to open the splashy new bars at one of Beijing’s
new boutique hotels, The Opposite House, in 2008. He’s known for his
exotic recipes—leaning heavily on gin—as well as his witty cocktail
names, like Herbie Goes to Detox and One Handed Lover.

Signature Cocktail: Apple & Ginger Aviation

  • 3 thin slices of ginger
  • 1/4 green apple
  • 2 oz. Tanqueray Gin
  • 1/2 oz. apple juice
  • 1/2 oz. lemon juice
  • 1/4 oz. violet syrup
  • 1/4 oz. sugar syrup

Muddle fresh ingredients in shaker, then add remaining ingredients.
Shake heavily and double strain. Serve in a martini glass and garnish
with pickled ginger.
