A few years ago, Javier de las Muelas, Barcelona’s renowned mixologist, opened this dark, half-secret restaurant behind his cult cocktail bar, Dry Martini. The menu blends Spanish, French and Italian flavors, though it’s worth going just for the futuristic gin-and-tonics—de las Muelas has spent years designing the perfect ice cube.

We loved: Iberian suckling pig with red-onion tart.
