This year-and-a-half-old spin-off of celeb chef Neil Perry’s Sydney restaurant is one of the anchors of a casino-hotel complex run by Australian gaming and entertainment mogul James Packer. Perry ages his own steaks and, through his power-player connections, scores fish of a quality that would usually only be exported to Japan. Rockpool also has one of the best selections of American wines in Melbourne.
We loved: Live Tasmanian scallop ceviche.
