Pho Thin

Hanoi’s most beloved street-food dish, pho is a pretty basic (but hard to master) soup of flat noodles, beef stock, star anise and fish sauce—and this is one of the best (and oldest) places to get it. Located in a downtown area that’s renowned for its pho spots, the restaurant has bench-style seating at tables equipped with pots of chile sauce and garlic cloves (locals use them like salt and pepper). Out front are two mammoth vats of boiling beef bones, flanked by piles of soup bowls.
