Serving a modern take on classic French cuisine, chef Wareing—who Gordon Ramsay mentored for 19 years—is known for theatrical food and his signature custard tart, which he prepared for the Queen's 80th birthday. The ever-changing à la carte menu has dishes like roast quail with hispi cabbage, although the tasting menus are the best option for enjoying the kitchen's full range.
