At his Sydney flagship, Aussie restaurateur–turned–international star Luke Mangan serves his signature modern Australian food in a grand room filled with oversize silk lamp shades and massive columns. Business travelers, sports types and the chef’s celebrity friends are among those who show up for chef Joe Pavlovich’s glamorous twists on bistro dishes. A nine-meter-tall wine tower displays bottlings from both the New World and the Old, specializing in rare wines and Champagnes.
