Business travelers, sports types and the chef’s celebrity friends are among those who show up for chef Joe Pavlovich’s glamorous twists on bistro dishes. A nine-meter-tall wine tower displays bottlings from both the New World and the Old, specializing in rare wines and Champagnes.
