The Georgian

Although the dress code at the Georgian is smart casual, jean-clad patrons are likely to feel underdressed at this palatial, light yellow salon in the downtown Fairmont Olympic Hotel. High ceilings, huge Palladian windows, and crystal chandeliers create a formal setting, and live jazz music fills the dining room on Friday and Saturday evenings. Named a AAA Four-Diamond restaurant for more than 20 years, the Georgian serves French-inspired Northwest cuisine such as foie gras with fig tart and herb-crusted venison loin with butternut squash cannelloni. The restaurant also has two prix fixe dinner menus and a traditional afternoon tea service.
