Set on the northeastern outskirts of the city center, this is where the Dutch come to dine Alice Waters style. Airy and bright, De Kas is located in what was once Amsterdam’s municipal greenhouse, which was built in 1926 but has been reimagined by Piet Boon as an ultramodern aerie with Moooi chandeliers and his own line of sleek tables and chairs. The daily changing prix fixe menu is made completely from organic ingredients and, whenever possible, sourced from the restaurant’s own gardens. The waitstaff is casual and affable, the atmosphere friendly—and, thanks to the largely intact greenhouse structure, suffused with natural light until 10 p.m. in May and June.

Insider Tip:

If you’re a party of four, book the chef’s table, a cozy bar-height corner alcove in the kitchen. You’ll get a bird’s-eye view of the kitchen crew at work, along with a customized menu paired with wine flights.
