Chef Mavro
Owned by the French-born chef, and James Beard Award-winner, George Mavrothalassitis, the critically-acclaimed Chef Mavro is regarded as one of the finest restaurants in Hawaii. Mavrothalassitis, known for his almost fanatical procurement of fresh ingredients, has created a French-influenced menu of Hawaiian cuisine that changes seasonally. There are three-, four-, and six-course menus, and each course is expertly paired with a wine. Offerings include sea urchin with “oursinade” froth and poached Kaua’i shrimp and the famous malasadas, filled Portuguese doughnuts. The dining room is decorated with Polynesian art and etched-glass windows.
