Roberto Pepin, who has worked with Alain Ducasse, is the newest chef at this high-profile spot on the Arno. Tuscan favorites, such as steak and game, dominate his menu, but he also incorporates modern touches, like mustard salsa, which he serves with roast pork. The impressive wine list has great Italian vintages by the glass.
We loved: Chestnut pasta with wild boar sauce.
