Australia’s most luxurious new hotel, Voyages Wrotham Park Lodge, sits in splendid isolation north of Cairns on a 1 1/2 million–acre cattle station—isolated, that is, if you don’t count the thousands of Brahman cattle, dingoes, emus, wallabies, and parrots that call the place home. A mere 20 guests stay in 10 hardwood bungalows, which reflect Australian vernacular architecture, with kangaroo-leather furnishings and oversized bathroom windows framing the paperbark-fringed Mitchell River. Outback traditions are preserved in the resort’s endless activities, from horseback riding to cattle herding. After dinner—served communally if you like, and matched with local wines—you can relax under the stars in an Australian squatter’s chair by the open fire.
