On Nukubati Island, Fijian-born hotelier Jenny Leewai Bourke has created an eco-sensitive resort concept that preserves the past. Her seven-room private-island property commands a 50-mile coastline unmarred by power lines. The plantation-style lodge runs on solar power and generators; rainwater is captured in cisterns. In keeping with the green ethos, Bourke hires women from nearby villages to weave floor mats for the public spaces, which are filled with rattan furniture and native art. Three honeymoon bungalows have thatched-roof porches and fan-cooled bedrooms. In addition to the satisfaction of protecting the fragile local environment, guests are rewarded with unadulterated night skies and easy access to the Great Sea Reef, one of the richest dive sites in the South Pacific.
