When it opened on the west end of Anguilla in 1984, the trendsetting 55-room Malliouhana Hotel & Spa helped put the beach-blessed island on the radar of stylish travelers. The Michelin-starred restaurant, named for its chef, Michel Rostang, is just as well-equipped. Accompaniment for such dishes as lobster ravioli in coconut milk or gingerbread-crusted veal can be found in the wine cellar, known for its stock of 25,000 bottles.
