A former 13th-century stone fortress may not seem like the most welcoming structure for a bed-and-breakfast, but Château de Cassis feels at once intimate and modern. It hovers 250 feet above the Mediterranean, in Cassis, which is quietly becoming an insider’s alternative to St.-Tropez. Carved from a citadel that dates back to the Roman presence in Provence, the inn is steeped in history. Bricks salvaged from the fortress’s ancient ovens line the towering vaulted public spaces. In the five suites—each with a private garden—rigorously edited furnishings are a breezy cocktail of high and low: ebony four-poster beds, pierced Moroccan wall lights, woven-plastic floor mats, and terra-cotta olive-oil jars.
